Green Coral Roti John with Sambal Mayo

Roti John is a beloved Singaporean hawker staple — a baguette coated in a savoury egg and minced meat mixture, then pan-fried until golden and crisp. Aeroveg Green Coral adds a fresh, delicate crunch that lifts the richness of the sambal mayo, making each bite feel light and perfectly balanced. The whole thing comes together in under 30 minutes on a single pan.
Method
- Make the sambal mayo. Mix mayonnaise, sambal oelek and lime juice together in a small bowl. Taste and adjust heat. Set aside.
- Season the mince. Combine minced chicken with onion, garlic, curry powder, soy sauce, salt and white pepper. Mix until combined.
- Coat the bread. Pour the beaten egg into a wide, shallow dish. Press the cut face of each baguette half into the egg so it soaks up the mixture evenly.
- Top with mince. Spread the seasoned chicken mixture evenly over the egg-soaked surface of each baguette half.
- Pan-fry. Heat oil in a large frying pan over medium heat. Place the baguette halves filling-side down. Press gently and cook for 4–5 minutes until the egg is golden, the mince is cooked through, and the surface is lightly crisped.
- Flip and toast. Flip and toast the crust side for 1–2 minutes. Transfer to a board and cut into portions.
- Assemble and serve. Spread sambal mayo generously over the filling. Layer Aeroveg Green Coral leaves on top and serve immediately while still warm.
Aeroveg Green Coral is tender and mild — add it after cooking, not before. Its delicate leaves wilt quickly with heat, so treat it as a finishing green. The contrast between the warm, crispy bread and the cool, fresh Coral is what makes the dish.
