Green Coral Miso Salmon Bowl
Silky miso-glazed salmon over jasmine rice with Aeroveg Green Coral, edamame, and a sesame-ginger drizzle — a weeknight bowl that looks like it took all day.
There's a reason miso and salmon are made for each other — the salt, the umami, the way the glaze caramelises under heat. This bowl layers that richness against the cool crunch of Aeroveg Green Coral, whose ruffled leaves and mild sweetness cut through the fat beautifully. Add edamame, pickled cucumber, and a sesame-ginger drizzle, and you have a bowl that earns its place on any table.
Method
- Quick-pickle the cucumber. Toss cucumber slices with rice vinegar, sugar, and a pinch of salt. Set aside for at least 10 minutes while you prep everything else.
- Make the miso glaze. Whisk together white miso, mirin, soy sauce, sesame oil, and honey until smooth. Set aside.
- Make the sesame-ginger drizzle. Combine sesame oil, soy sauce, grated ginger, rice vinegar, and honey. Whisk well and taste — adjust for balance. Set aside.
- Glaze and cook the salmon. Pat salmon fillets dry. Spoon the miso glaze generously over the flesh side. Heat an oven-safe pan over medium-high heat with a little neutral oil. Place salmon skin-side down and press lightly. Cook 3 minutes until skin is crispy, then flip onto the flesh side for 1 minute. Transfer to oven at 200°C and roast for 5–6 minutes until just cooked through and the glaze is caramelised.
- Warm the rice. Fluff jasmine rice and divide between two wide bowls.
- Build the bowl. Arrange a generous handful of Green Coral over one side of the rice. Add pickled cucumber slices, a spoonful of edamame, and then place the miso salmon fillet on top.
- Drizzle and finish. Spoon the sesame-ginger drizzle over the bowl. Scatter spring onion and sesame seeds over everything. Serve immediately.
