Green Coral Cold Sesame Noodles with Shredded Chicken
Chilled wheat noodles, shredded chicken and crisp Aeroveg Green Coral tossed in a nutty sesame dressing — the coolest dinner for a hot Singapore evening.
On a sweltering evening, cold noodles are the answer — and Aeroveg Green Coral is what makes this bowl sing. Method
- Cook the noodles. Boil according to packet instructions, then rinse under cold running water until completely chilled. Drain well.
- Make the dressing. Whisk the sesame paste, soy, vinegar, sesame oil, honey and garlic, adding cold water a spoonful at a time until it pours like cream.
- Dress the noodles. Toss the chilled noodles with two-thirds of the dressing until every strand is coated.
- Add the chicken and cucumber. Fold through the shredded chicken and julienned cucumber.
- Fold in the Green Coral. Add the Aeroveg Green Coral last, tossing just once or twice so the leaves stay lofty and crisp.
- Serve. Divide between two bowls, drizzle over the remaining dressing, and finish with spring onion and sesame seeds.
