You pick up a bag of spinach at the supermarket. It looks fine. It is cold. The label says "fresh." You put it in your trolley and move on. What the label does not say is when those leaves were cut. It does not tell you which country they came from, how long they spent in a refrigerated container crossing a border, how many days they sat in a distribution centre, or how many more days they waited on the shelf before you arrived. All of that matters — because the moment a plant is cut, a clock starts. And it does not stop just because the temperature is low.
Where Your Supermarket Greens Actually Come From
Singapore imports over 90% of its food. For vegetables specifically, Malaysia supplies around 42%, China around 27%, with the remainder coming from Australia, Indonesia, Thailand, and further afield.
That geography matters. A head of Chinese cabbage grown in Malaysia's highlands does not teleport to your table. It gets harvested, sorted, packed, loaded onto a refrigerated truck, driven to Singapore, cleared through customs, unloaded at a distribution centre, sorted again, delivered to a supermarket — and then it waits for you to pick it up.
Each of those steps takes time. And time, after harvest, is the enemy of nutritional value.
From Field to Your Trolley: How Long It Actually Takes
The journey for imported vegetables follows a consistent pattern. On the optimistic end, you might be eating vegetables cut 4 days ago. On the slower end of the chain — particularly from China or further afield — that number stretches to two weeks or more.
The Numbers Are Not Comfortable Reading
Vitamins and antioxidants in vegetables do not sit patiently in cold storage. They degrade — at rates that depend on the specific nutrient, the temperature, and how the produce is handled.
Vitamin C is the most sensitive indicator. Research published in the journal Food Chemistry found that spinach can lose a significant portion of its vitamin C within the first 24 hours at ambient temperatures. Even under refrigeration at 4°C, salad leaves lose between 35% and 86% of their ascorbate content over 10 days of storage. Green beans lose up to 77% of their vitamin C within 7 refrigerated days. Folate, carotenoids, and other antioxidants follow similar trajectories — declining steadily from the moment the plant is separated from its root.

Cold Storage Slows the Clock. It Does Not Stop It.
The cold chain that moves vegetables from farm to supermarket is genuinely sophisticated. Temperature-controlled trucks, refrigerated warehouses, chilled display units — all of it is designed to slow down degradation and keep produce looking acceptable for as long as possible.
It works, to a point. Cold temperatures slow the respiration rate of harvested plant matter, which slows nutrient loss. But it does not arrest it. A vegetable at 4°C is still losing nutrients. It is just doing so more slowly than it would at room temperature.
"Cold" and "fresh" are not the same thing. Cold means deterioration has been managed. Fresh means it has barely begun.
What the Word "Fresh" on a Label Actually Certifies
There is no regulated definition of "fresh" for produce in most markets. A vegetable can be labelled fresh if it has not been cooked, frozen, or processed — regardless of how many days it has spent in transit or sitting on a shelf.
This is not a deliberate deception. It is simply a gap between the word's everyday meaning and its technical application. When consumers see "fresh," they think: recently cut, full of nutrients, good to eat now. What the label actually confirms is: has not been transformed into something else. The vegetable could have been cut ten days ago and the label still stands.
That is not a marketing claim. That is what a short chain does — and in Singapore, where most vegetables travel hundreds of kilometres over several days before they reach you, that gap is the difference that matters most.
